INSTITUTE

The history of Instituto Maniva begins in 2002, but it was in 2007 that it formally became a Civil Social Organization of Public Interest (OSCIP). Our commitment is to create a bridge between family farmers, family and professional cooks and consumers, always valuing the local food culture and promoting conscious consumption.

Tapioca Workshops

2002

Invited to develop in a public school in Humaitá - Rio de Janeiro, an extra curricular activity for Children's Day in October 2002, chef Teresa Corção designed a workshop that could value the food most related to the origins of those children, most of whom were of northeastern origin: cassava. To show its value, varied information was chosen, such as the letter from Pero Vaz de Caminha to the King of Portugal, talking about the colonizers' astonishment when they realized the strength of traditional peoples, who had their food base in this root. The Workshop also shared with the students songs of Northeastern rhythm talking about the passion and loyalty to flour and the Tupi-Guarani legend about the origin of cassava. In the final stage, the children learned to make their own tapioca and often tasted this ancestral food for the first time.
